The origin of São Tomé Cacao
Off the west coast of Africa lies São Tomé, once known as The Chocolate Island. Cacao first arrived here in the 1820s, when the Portuguese brought seeds from Brazil. A century later, the island had become the world’s largest producer, its landscape filled with lush cacao estates called roças.
After independence in 1975, many plantations fell silent. Yet among the ruins, cacao trees continued to grow wild, guardians of an ancient lineage. In recent decades, a quiet revival has begun. Guided by local farmers and visionary producer Diogo Vaz, São Tomé’s cacao tradition is being reborn, blending ancestral knowledge with modern craftsmanship.

This cacao reveals a bright, fruity acidity with layers of tropical and red fruit, wine, smoked bell pepper, wood and spice.
A rare combination of Amelonado and Trinitario genetics gives it a refined balance, deep yet lively, grounding yet uplifting.

Crafted with precision from pod to bar
At Diogo Vaz, every step from harvest to fermentation, drying, roasting, and conching happens on the island itself. Pods are hand-harvested, beans are fermented in banana leaves, and slowly sun-dried on wooden tables.
Inside the local chocolate atelier, roasting is done at precise temperatures to preserve the bean’s natural character.
