The difference between cacao powder and cacao mass

Most people know cacao primarily in the form of cacao powder. Perhaps from childhood, when you made hot chocolate at home, or as an ingredient in baking. Even today, cacao powder is widely used in smoothies, desserts, and warm chocolate drinks.

But when you step into the world of pure and ceremonial cacao, you’ll soon come across another form: cacao mass.


Although both products come from the same cacao bean, they differ significantly in composition, flavor, nutritional value, and energetic effect. We’d love to guide you through the most important differences.



What is cacao mass?

Cacao mass, also known as cacao paste or pure cacao, is made from whole cacao beans. The beans are fermented, dried, lightly roasted, and then stone-ground or finely milled into a liquid paste. Once cooled, the cacao solidifies into blocks or disks.


Cacao mass contains:

  • 100% pure cacao

  • Both cacao solids and the natural cacao butter

  • No additives

  • All original nutrients and natural fats


This is the traditional form used for ceremonial grade cacao. The process is often artisanal, with farmers who deeply care for the plant, the surrounding ecosystem, and the integrity of the cacao’s origin.


What is cacao powder?

Cacao powder is made by pressing much of the natural cacao butter out of cacao mass. What remains is dried and ground into a fine powder.

This process is typically done mechanically and on a larger scale.


Cacao powder contains:

  • Less fat (usually 10–20%)

  • A drier texture

  • A more concentrated taste

  • Often less creaminess


Although cacao powder still contains many antioxidants, it lacks an important part of the bean: the natural cacao butter.


Isn’t less fat healthier?

The natural cacao butter is much more than just fat.

It gives cacao its rich, creamy flavor and supports a gentler absorption of nutrients. It also contributes to sustained energy and carries fat-soluble compounds that are part of cacao’s overall effect. Many people experience cacao butter as softening, nourishing, and grounding.

By removing the cacao butter, cacao powder offers a less complete experience.


The impact of processing the cacao.

Cacao mass is the whole bean in its purest form, which is why it offers such a broad spectrum of nutritional benefits. Cacao is considered one of nature’s most complex foods.


It naturally contains:

  • Magnesium

  • Iron

  • Potassium

  • Zinc

  • Antioxidants

  • Theobromine

  • Anandamide

  • Phenylethylamine (PEA)


Cacao powder also contains many of these substances, but because the fat fraction has been removed, the product is less complete. Furthermore, the process is often less artisanal and heavily mechanized, meaning that, for example, high heating results in a greater loss of nutritional value.


This is also reflected in the taste. Every cacao is different, but with cacao mass, you taste a rich flavor and layered aromas. It is fuller, creamier, and provides a softer and rounder mouthfeel. In contrast, with cacao powder, you taste a more bitter flavor. It is drier and more intense, less creamy, and lighter in texture.


In the end, quality makes the difference.

Not all cacao is created equal. High-quality ceremonial cacao is crafted with great care and attention to:


  • Cacao genetics

  • Soil health

  • Fermentation

  • Drying

  • Artisanal processing

  • Fair and transparent partnerships with farmers


With regular cacao powders, the origin is often less transparent, the processing more industrial, and ingredients are sometimes added to soften the bitterness for example.
